Pinot Grigio Riserva D.O.C.

The Pinot Grigio varietal has been cultivated since a long time in the Adige Valley, where it is also known as Ruländer. The shape of the bunches of grapes, copper-grey in colour, reveals its close relationship to the Pinot Nero from which it seems to derive. Favourable soils to its cultivation are both in the deep valley as well as on low hills. The Pinot Grigio Riserva is produced with grapes cultivated in the vineyards of one of the most traditional areas for this varietal: named “Zablani”, which is situated Northeast of Mezzocorona and characterized by watery soils and good drainage, very similar to the adjacent zone of Teroldego.

PRODUCTION-AREA: Trentino - Valle dell’Adige, at the foothills of the Dolomites.
VINIFICATION: The grapes are hand-picked and delivered within a few hours to the winery where they are selected, immediately pressed and sent to the maceration phase, performed in a cool environment with soft pressing. The must is cooled at 8-10° C (46-50° F) and left an entire night to wilt naturally. The following day the yeast is added and the alcoholic fermentation begins at a controlled temperature of 16-18° C (61-64° F) which lasts 12-15 days. Part of the Pinot Grigio is then fermented in stainless steel tanks (40%) and the remaining 60% is fermented in small oak barrels, 1-2 years old, to obtain a delicate contribution of oak to the fruity notes of the Pinot Grigio. After fermentation the wine remains in oak barrels for 6-8 months during which the wine undergoes several “batonage” operations (i.e. mixing up of the yeasts). After 10-11 months the wine fermented in stainless steel is blended with the wine fermented in barriques obtaining a product with typical notes of vanilla and ripe fruit, but also with the freshness and typical aroma’s of the Trentino Pinot Grigio.
CHARACTERISTICS: Colour: light yellow; fragrance: complex, with notes reminiscent of ripe fruit (white peach, pear and mature camomile), well-harmonised by the sweet notes which derive from the refining in oak. flavour: harmonious, elegant, refined with a fresh and elegant finish.
PAIRINGS:It pairs well with first courses baked au gratin style, polenta, and second courses consisting of white meat. A particularly good accompaniment is Tagliatelle with Porcini mushrooms.
